I'm writing an essay on war and I'm not sure if I am suppose to capitalize "world wars"
is it suppose to be "World Wars" or "world wars"?
I know if I was referring to one war you would capitalize (World War One).

The correct way is to capitalize it and just state World War I and World War II. It is not necessary to put the s to show plural. I hope this helps.
